Would a quality quick-service mexican restaurant (fast food style) do well in a college town?

I’m not talking about Taco Bell, but rather starting my own. It would have the same quality food as a sit-down, but served on plastic plates and to-go boxes instead of normal plates. I’m talking authentic mexican food at a lower price, but with the same high quality and made much faster.
Yes, because most college students are the go. And are not willing to sit down ad eat. They are going to want to get a quick meal. Since you are saying the food is going to be authentic it will draw the health crazy people who arent up for McDonalds’ fast greasy unhealthy food. Good Luck!!
